Pumpkin Quiches

INGREDIENTS

  • (8 servings)
  • 1 Medium size Pumpkin
  • 1-2 cup Shredded cheese
  • 3 Slices Bacon
  • 3 Large eggs
  • 1/2 Medium size Onion
  • 1/2 Pkg Shimeji mushroom
  • 1cup Whipping /Heavy cream
  • 1/2 green pepper
  • 1 tsp Salt
  • 1tsp Black pepper

1. Rinse the outside of the pumpkin with cool water to get rid of any debris and dirt.



2. Cut the stem of the pumpkin off and place pumpkin in a microwave safe bowl, and cover with plastic wrap. Microwave 6-8 min or until pumpkin is soft enough to handle. Cut the pumpkin from side to side (not top to bottom. Shown on the picture above) Use whole pumpkin as a container



3. Dig out the stringy stuff and seeds with a metal spoon.



4. Cut Onion, Bacon, green pepper and mushroom into dices. And then place them in the pumpkin container.



5. In a medium mixing bowl, eggs, shredded cheese, whipping /heavy cream, salt and black pepper until blend well.



6. Pour #5 into pumpkin container, and then put pumpkin into the inner pan.



7. Select Bake menu, set the time for 50-60 min.



8. When LCD starts flashing 0 min. open the lid check pumpkin and quiches are fully cooked. If it’s not, bake another 15min.
